Raw Rocky Road

Who can say no to a chocolatey raw rocky road? These little cuties are so sweet and satisfying you’ll be going back for seconds… maybe even thirds.


This recipe is much healthier than your average rocky road, and I can guarantee that it is also very tasty. It is predominantly sweetened with pure Medjool dates and is packed with good fats from the coconut oil. So, no need to worry about putting on weight or feeling bloated from having a couple serves of these delicious raw rocky roads.


Also, don’t be afraid to get creative with this recipe! I just added a few of my favourite ingredients, such as pistachios, almonds and almond butter. You can substitute these with anything you desire, such as different nuts and seeds, or even some dried fruit like cranberries. So, you really can’t go wrong with this recipe. You can add anything to enhance the crunch or chewiness of the treat.


However, next time if I am feeling a little cheeky, instead of using dates, coconut oil and almond butter to hold this dessert together, I might use melted vegan chocolate. I haven’t experimented with this idea yet, but for those who desire a healthy rocky road that tastes very close to the real thing, I would suggest giving this idea go. But for those who want to treat themselves with something much healthier, then stick with the recipe I have created.


Don’t forget to store these rocky roads in the fridge as they are raw – the coconut oil may start to melt if you leave them in a warm place for too long. Enjoy!


RAW ROCKY ROAD


Serves 8 - 10

INGREDIENTS

- 1/2 cup almonds (roughly chopped)

- 1/4 cup pistachios (roughly chopped)

- 1/2 cup desiccated coconut

- 1/4 cup goji berries

- 2 tbsp cacao nibs

- 1/4 cup cacao powder

- 6 pitted dates

- 2 tbsp coconut nectar

- 1/3 cup coconut oil (melted)

- 1/3 cup almond butter (or 1/3 peanut butter – I prefer peanut butter)

- 1 tsp vanilla essence


METHOD

Boil the dates until they become soft. Remove the skin of the dates and roughly chop them. Mix all of the ingredients together until smooth and sticky. Place baking paper into a rectangular cake tin. Spread the raw rocky road mixture evenly into the cake tin. Place the cake tin into the fridge for 1 hour until the raw rocky road sets.
