Blueberry Chia Seed Pudding

Wake up to this fresh blueberry chia seed pudding for a satisfying and nutritious breakfast or treat. This guilt-free pudding is the perfect way to start your day with a hint of sweetness, burst of lemon zest, and so much berry-licious flavour!


This blueberry chia seed pudding couldn’t be easier to make. With only 5 plant-based ingredients, it will have you coming back for more. It brings major flavour; however, almost no time in the kitchen. Perfect for meal prep! It takes less than 10 minutes to make! If you choose to eat it for breakfast, you can make a big batch at the start of every week. Or if you just feel like something fresh and sweet, you can easily make it, especially if you are on a tight schedule.


All you have to do is purée some blueberries in coconut milk and then stir in chia seeds. For extra zing, you can add a little cinnamon or honey. You can eat it straight away or even let the chia seeds soak overnight. If you want a bit of texture, sprinkle some roasted almonds or buckwheat groats on top. I use coconut milk to add extra sweetness; however, you can use any plant-based milk that you prefer. I know almond milk is very popular, but it tastes like paper to me.



I would not say that this recipe is particularly indulgent like some of my other desserts; however, it is definitely much healthier. The foundation of this treat is made with nutrient-dense chia seeds which are significantly high in fibre and omega-3 fatty acids. Chia seeds are great for making raw puddings as they expand when soaked in liquid.


When I think of the term “superfood”, blueberries are one of the first to comes to mind. Blueberries are known to be filled with nutritional value, in which they are packed with potassium, folate, antioxidants and vitamin C and B6. So, do yourself a favour and include these delicious cuties into your diet. You can start with making this blueberry chia seed pudding! Serve it in a jar, bowl or perhaps add it to your smoothie.


Blueberry Chia Seed Pudding

INGREDIENTS

- 1 cup coconut milk

- 3/4 cup blueberries

- 1/2 cup chia seeds

- 3 tbsp coconut sugar

- 1 tbsp lemon juice


METHOD

Blitz the blueberries into a puree, and then mix all of the ingredients together until completely combined. Place the mixture aside and refrigerate for at least 6 hours or overnight to infuse the blueberry flavour, or eat straight away.
