Raw Tim Tams

Finally, healthy vegan Tim Tams are here! Smooth, creamy ganache sandwiched between two chocolate biscuits and coated in rich chocolate… it’s a family favourite amongst the best of us!


Oh, sweet old memories! This recipe for vegan raw Tim Tams is way overdue! It reminds me of relaxing Saturday nights, rugged up in a blanket, watching movies and eating all sorts of junk food, particularly Tim Tams. I could never smash out a whole packet in one sitting; however, I know some special people that can. The conventional Tim Tams would sometimes make me feel a little sickly. They were a bit too rich and sugary for me.


Nevertheless, I have finally made a batch of healthy raw Tim Tams that all can enjoy! The chocolate shell holds the beautifully creamy ganache inside. Once you break that sweet, dark protective layer, the soft biscuit breaks under the cut of your bite and presses into the bittersweet chocolate ganache… Yet that was only the first bite! If you make a whole batch, be sure to save enough for yourself. I guarantee you will not want to share these tasty Tim Tams.


Now I bet you are thinking how can these indulgent, chocolatey biscuits be completely healthy and guilt-free? Well I promise you that this recipe was made with allergy-friendly, wholesome ingredients. So, don’t judge a book by its cover.

Of course, however, we are still dealing with a dessert, so let’s treat it as such, and let’s not compare it with an apple or a super healthy low-fat salad. Yet still, these Tim Tams contain a lot more nutritional value that the original, considering that all the ingredients that I have used are not processed or refined.



Food should not be looked at something that is costly or is simply there to fill your stomach. People should look at good food as a means to enjoy life and to nourish the body. This is how I eat every day. I take my time to source healthy food, I cook from scratch, so I do put a lot of effort into arranging my food and eating it slowly.


People use the excuse that they do not have time or money to do the following. But I believe you need to make exceptions for the good of your health. Spend the money now on health food, then you will not have to spend money on health expenses later in life. Take it from me, someone who gave up their health and suffered the consequences.


These healthy Tim Tams are for the lover of sweet treats made from the best sourced ingredients, with no nasties! Not only are they free from gluten and dairy, they are also sweetened with fresh pitted dates and unrefined coconut nectar. Like all desserts, moderation is key, so enjoy every bite!



Raw Tim Tams

Serves 8 - 10


INGREDIENTS

Biscuit

- 1 cup almond meal

- 1/2 cup buckwheat flour

- 7 pitted dates

- 1/4 cup cacao powder

- 2 tbsp coconut oil (melted)

- 2 tbsp coconut milk


Ganache

- 1 cup coconut cream

- 3 tbsp cacao powder

- 2 tbsp coconut nectar

- 1 tsp vanilla essence


Topping

- 1 1/2 cup vegan chocolate (roughly chopped)


METHOD

For the biscuit, boil the dates until they become soft. Remove the skin of the dates and roughly chop them. Mix all of the ingredients together until smooth and sticky. Place baking paper onto a baking tray. Spread the raw biscuit mixture evenly onto the baking tray and then place it in the fridge for 10 minutes to set.


To make the ganache, use a blender to mix the ingredients together until completely combined. Cut an even number of rectangles out of the raw biscuit mixture. Use a tablespoon to spread the ganache on every two biscuits. Sandwich together two raw biscuits together – one with ganache and one without ganache. Put the biscuits in the fridge for 30 minutes.


For the topping, melt the chocolate in a saucepan over medium heat until smooth. Dip each biscuit into the chocolate. Put the Tim Tams into the fridge for 15 minutes to allow the chocolate to set.
