Raw Berry Truffles

I haven’t made a truffle recipe in a while, so I felt that it was time to finally create one!


These no-bake berry truffles are the ideal snack to curb your sweet cravings. They are also the perfect treat for Valentine’s Day (I would save this recipe for next year)! They are very simple to make and yet very impressive in regards to taste. It’s not surprising, but they are also free from any nasties and they are completely vegan and paleo friendly. So, they are made to be particularly healthy and appeal to those who are looking to satisfy their stomachs with something fresh and tasty.


If you are feeling a little cheeky, however don’t be shy to dip these little cuties in such vegan, refined-sugar free dark chocolate. Doing so will balance out the overly sweet fruity flavours. I also didn’t think of this idea until now, but you could even add a raspberry in the centre of every truffle just to enhance the berry flavour.


One of my favourite things about this recipe is the fact that it does not contain nuts (you’re welcome nut-allegers)! It's quite challenging to make raw recipes without nuts, particularly truffles, because without them it’s difficult to produce a creamy consistency with earthy flavours. However, I was able to substitute them using buckwheat groats (buckinis), which creates a similar texture in recipes when using nuts. If you do prefer to have nuts in your truffles, you can swap the buckwheat groats for roughly-chopped almonds or cashews – I prefer to use cashews because I enjoy its creamy texture.


I honestly love the way these truffles look! I’m pleased with its vibrant pink colour – I was afraid the end result was going to look brown and dull. If your berry powder doesn’t produce enough colour, you can always add strawberry and raspberry puree instead. Sourcing colour from nature is the healthiest way! Enjoy!



Raw Berry Truffles

Serves 10 - 12


INGREDIENTS

Truffles

- 1/3 cup date puree

- 1 1/3 cup buckwheat flour

- 2 tbsp vanilla protein powder

- 3 tbsp buckwheat groats

- 3 tsp berry powder


Topping

- 1/3 cup desiccated coconut

- 3 tsp berry powder


METHOD

Steam or boil the dates until they become soft. Remove the skin of the dates and roughly chop them. Use a blender to blitz the dates into a puree. Mix all of the ingredients together until smooth and sticky. Roll one tablespoon of the mixture into balls and leave them aside. To make the topping, mix the desiccated coconut and berry powder together. Then roll the truffles in desiccated coconut and then place them into the fridge so they become firm.
