Melting Moments

The most rewarding part about baking is being able to share with friends and family. It’s like icing on the cake really… pardon the pun.



Melting moments are a favourite of mine way back from my childhood. These modest little biscuits are often overlooked, so they have to be tasted to be appreciated. They are parallel to the lightest shortbread and, not surprisingly, melt in your mouth. However, the delight that comes from creating this recipe is down to the cream filling. You can simply add whatever flavours you desire to the biscuit and filling.


I have tried making this recipe multiple times using different gluten-free flour blends, and although almond meal can make cakes and biscuits slightly dense, it also creates a crumbly texture. This effectively contrasts against the immaculate taste of the creamy, icing filling.

If you’re wondering whether melting moments are the same as ‘yo-yo’ biscuits, I can tell you that they are pretty similar. The only difference is that yo-yos include custard powder in the cream filling.

Melting Moments

Serves 10 - 12


INGREDIENTS

Biscuit

· 1 cup almond meal

· 1/4 cup coconut flour

· 1/4 cup tapioca flour

· 1/3 cup coconut nectar

· 1/4 cup coconut sugar (refined)

· 1/2 cup coconut oil (melted)

· 1 tsp vanilla essence

· Pinch of salt


Icing

· 1/2 cup coconut cream

· 1/4 cup coconut nectar

· 1/4 cup coconut oil

· 1 tsp vanilla essence


METHOD

Preheat the oven to 180 degrees on fan bake.


Mix all of the ingredients together in a food processor until completely combined. Place baking paper onto a tray. Use the size of a tablespoon to measure each biscuit. Place each biscuit flat and 3 cm apart. Put it in the oven for 8-10 minutes. After the biscuits have cooked, set them aside for 10-15 minutes to cool down.


For the filling, add the ingredients into a blender to blitz them together until smooth. Use a tablespoon to spread the mixture between every second biscuit. Sandwich two biscuits together to form a complete melting moment.
