Choc-Chip Banana muffins

Perfectly moist, tender and healthy vegan banana muffins with chocolate chips and creamy peanut butter frosting are made deliciously simple! Easy recipe ready in 30 minutes!


These humble muffins are mainly sweetened with bananas, so they are completely guiltless in which they almost taste just like traditional banana bread! This is an easy recipe so you will come back to make it again and again.


It was time that I come up with a simple choc-chip banana muffin recipe. I have already made marbled banana muffins on my blog which is vegan and gluten-free. It was actually a popular recipe amongst friends and family, so definitely check it out if you love marbled baked goods.


What makes this banana muffin recipe so special is that it is sweetened only with bananas. Of course, I ruined the sugar free thing by adding vegan chocolate chips. However, you cannot skip this step as adding chocolate chips brings these muffins to the next level - who can resist big melted chocolate chips in their banana muffins? Just make sure that you are using chocolate chips, or roughly chopped chocolate, that are refined sugar-free in your muffins.


I was over eating these banana muffins. That’s how tasty they were to me, and I am not a huge fan of bananas – I could take them or leave them. But what ready took these muffins to the next level was the peanut butter frosting! I almost forgot how harmonious banana, chocolate and peanut butter are together when they are combined in a dessert.


The bitterness of the dark chocolate chips nicely balances out the sweet banana flavour, whereas the peanut butter adds a hint of saltiness and richness. If you wish to enhance complexity to the flavours in your muffins, you can add some cinnamon as this earthy spice compliments bananas perfectly.


One of the best things about these banana muffins is how versatile they are. They can be eaten for breakfast, or as a snack, or even dessert! They can be whatever you need them to be, well just about.

Choc-Chip Banana Muffins

Serves 8 – 10


INGREDIENTS

Muffins

- 3/4 cup almond meal

- 3/4 cup buckwheat flour

- 1/4 cup tapioca flour

- 1/4 cup coconut oil (melted)

- 2 bananas

- 2 tbsp coconut milk

- 3/4 cup vegan chocolate chips

- 3/4 tsp baking soda

- 1 1/2 tsp vinegar


Frosting

- 1/2 cup coconut cream

- 1/2 cup peanut butter

- 3 tbsp coconut nectar

- 2 tbsp coconut oil

- 1 tsp vanilla essence


METHOD

Preheat the oven to 180 degrees on fan bake. Sift all of the dry ingredients into a bowl. Add the wet ingredients to the dry ingredient. Fold the mixture together until smooth and sticky. Pour the mixture into a cupcake baking tray. Place the tray into the oven for 15-20 minutes. After the cupcakes have cooked, set them aside for 5-10 minutes to cool down.


For the frosting, use an electric mixer to blend the ingredients together. With a piping bag, pipe the frosting onto each cupcake.
